I used to think of avocado toast as strictly a summer breakfast or something to order when going out to brunch, but not any more! It’s so simple, delicious, and healthy, and since I’ve been eating mostly vegan for several months now, I make it at least three times a week for breakfast. Today I’m sharing three easy and delicious avocado toast recipes. But first, a couple of tips:
1. Use hearty bread.
You’re going to be piling on the toppings, so make sure you have hearty bread.
2. Mash avocados separately.
To avoid tearing the bread, mash avocados in a bowl or in the avocado skin.
3. Remember the salt.
Don’t forget to salt the avocados for the best flavor.
Vegan Avocado Toast
This is my recipe and the one I make most mornings…it never gets old!
I keep a mixture of hemp hearts and flax seeds on the counter and add a tablespoon or more to salads or yogurt for added texture, protein, and other nutritional benefits.
Here’s what you’ll need:
1-2 slices of toasted bread
2-4 T hummus (any flavor)
4-6 cherry tomatoes
1 T flax seeds
1 T hemp hearts
salt and pepper to taste
While the bread is toasting, cut avocado and remove seed. Spread hummus over toast and sprinkle with flax seeds and hemp hearts. Add mashed avocado, and top with halved cherry tomatoes and salt.
